Noel Serrano Ham, a lovely boneless, dry-cured ham from the Catalonia region in the northeast corner of the country. The factory in Girona sits adjacent to the Natural Park of the Garrotxa Volcanic Area and is blessed with an ideal microclimate on the rising plateau nestled between the Mediterranean Sea and the Pyrenees Mountains. The hams are cured for 14 months and carry the prestigious logo of the Consorcio del Jamón Serrano, the ham-shaped "S," as well as the numbered quality control certification on the label, indicating that it is protected as a Traditional Specialty Guaranteed (TSG) by the European Union Regulation.
